Muscle Fibre Characteristics and Physico-Chemical Parameters of m. semimembranosus from Pu3awska, Polish Large White and Pietrain Pigs**

چکیده
The aim of the studywas to comparemuscle fibre parameters and quality ofm. semimembranosus in pigs. The experiment was conducted with 18 Pu3awska pigs, 24 Polish Large White (PLW) pigs, and 24 Pietrain pigs slaughtered at 105 kg bodyweight. The results obtained indicate that the breed of pigs has a significant effect on both muscle fibre composition and vascularization. The muscles of Pu3awska pigs are the most oxidative, as evidenced by the greatest number of capillaries and the highest percentage of type I and IIA fibres compared to themuscle of PLWand Pietrain pigs. In turn, the most glycolytic muscles (highest percentage of type IIB fibres, poorest vascularization as well as the greatest diameters of muscle fibres of all types under analysis) were noted in Pietrain pigs. Analysis of the physico-chemical parameters of the meat showed the lowest pH45, a* and IMF, aswell as the highest L*, drip loss and shear force values in Pietrain pigs compared to Pu3awska and PLW pigs. Significantly higher IMF, and a* values, as well as lower drip loss, shear force and L* values were observed in Pu3awska pigs.

Relationships between muscle fibre characteristics and physico-chemical properties of longissimus lumborum muscle and growth rate in pig fatteners of three breeds*
In 40 Polish Landrace, 38 Polish Large White and 14 Pietrain fatteners the longissimus lumborum (LL) muscle fibres were characterized and LL quality indicators determined. The correlation was estimated between the LL fibres traits and daily live weight gain, muscle pH and texture parametres. Muscle fibres were identified as I, IIA and IIB types based upon their dehydrogenase (NADH) activity. Th...

The study was carried out on 119 hybrid grower-finisher pigs that were divided into 5 experimental groups. The analysis covered carcass and meat quality traits of crossbred pigs produced by mating Polish Large White × Polish Landrace crossbred sows with boars of either purebred Pietrain (P) or crossbreds of Line 990 × Pietrain (LP), or Pietrain × Line 990 (PL), or Duroc × Pietrain (DP), or Piet...

The objectives of this study were to evaluate the influence of different pure pig breeds and muscle types on the expression of muscle proteins, as well as their interactions, and second, to find biomarkers for breed and muscle types. A total of 126 male pigs, including 43 Landrace, 21 Duroc, 43 Large White, 13 Pietrain, and 6 Belgian Landrace, were slaughtered at the age of 174 +/- 6 d. Samples...
متن کاملPIT1 gene polymorphism in Pietrain and Large White pigs after divergent selection.
We examined the polymorphisms in the PIT1 gene of 103 pigs and compared their frequencies in the maternal and paternal lineages of the Pietrain and Large White breeds, which have undergone divergent selection for over 30 years. DNA samples extracted from the blood of these animals were amplified by PCR and genotyped by RFLP, using the restriction enzyme RsaI. The data were analyzed with the chi...

A total of 150 Large White cross Landrace pigs (110-120 kg) of both sexes were used to investigate the effects of three different lairage times (0 h, 3 h, 9 h). Blood samples were collected at exanguination and cortisol, glucose, lactate, muscle enzymes and haematological parameters were determined. Post-mortem measurements of muscle pH were taken at 20 min, 2 h and 24 h from Longissimus thorac...
